Hey guys, gals and everyone else!
I did some baking (kind sorta…staywithme) today after I went to the gym. The irony is strong I know. BUT I thought I’d share what I whipped up. Now full disclosure, the original recipe is from my step-mom Rebecca, she makes these for my dad. (Everyone say hi to my Dad and Rebecca!) My Dad has a serious love for Reese’s peanut butter cups, and that’s basically what these cookies are. I took the basic recipe and added a couple things! Hope you enjoy!
Okay…I admit they kinda look bleh. But I swear they’re delicious!
My crowning achievement is that this ‘fighter cookie’ recipe has been approved by two very picky boyfriends. (At different times…ones a ex…you get the picture) Hopefully you like them too! 😉 OH! BTW these cookies are nick-named ‘fighter cookies’ because of the added protein! The sugar and protein are a great mid round snack for any sports events 🙂 I just happened to have a fighter on my hands when I first made them.
1.5 cups protein powder. Now not all protein powders are great for baking. You want the really ‘fluffy’ ones. I hear Quest is a really good baking whey protein, but I used the MyProtein powder that was sent to me and it did great. Like I seriously think I’m just going to use this powder for baking! 2 cups quick cook oats.
1.5 cups sugar
.5 cup salted butter
.25 cup unsweetened cocoa powder
2 teaspoons vanilla extract
.75 cup peanut butter. I used crunchy peanut butter because like the texture it adds….and because that’s what Alexander brought me when I asked him to stop by the store for me lol.
ALL the chocolate chips (semi-sweet) I mean .5 cup would probably do…but I’m not going to rain on your parade here folks.
Mix all that dry stuff yo’! Melt the butter and peanut butter. Mix all the wet ingredients in.
I found mixing everything with my hands was just easier. Plus, less dirty dishes!
Plop those suckers down on some wax paper.
Then wait at least a half hour. I took a shower with the boyfriend, no shame.
Eat all the cookies!
